Hand-Sharpened 270mm Yanagiba — Single Bevel, Oval Wood Handle, Traditional Urasuki Back


Every edge on this knife is finished by hand on whetstones by an experienced

sharpener — not machine-ground. The result is a thin, clean single-bevel edge

that glides through fish without tearing the flesh.


The handle is solid wood in a rounded octagonal (oval) profile. Unlike round or

flat handles, this shape locks into the palm and resists rolling in the hand,

even with wet fingers. Brushed stainless bolster, traditional Japanese-style

wa-handle construction.


The back of the blade is properly finished with urasuki — a shallow concave

hollow ground into the reverse side, framed by a flat polished rim (uraoshi).

This is what separates a real single-bevel knife from a knife that is simply

sharpened on one side. The hollow reduces friction and drag through the cut,

and makes the blade far easier to maintain: you only need to flatten the narrow

rim, not the entire face.

ABOUT THE BLADE FINISH

The blade carries a brushed satin finish rather than a mirror polish. This is a

working finish — it hides light scratches from daily use and does not show

fingerprints the way a polished blade does.


CARE

Hand wash and dry immediately after use. Do not put in a dishwasher. Do not use

on bone, frozen food, or hard cutting boards. Store in the saya when not in use.


NOTE ON HANDEDNESS

This is a traditional single-bevel knife ground for right-handed use. Left-handed

users will find the cut steers off-line.
