A Japanese-style deba built for fish work: breaking down whole fish, removing heads, filleting, and cutting through small bones. The blade carries real weight behind the edge, so it does the heavy work — you just guide it.
BLADE
- Steel: 7Cr17MoV stainless steel, hardened for edge retention and easy resharpening
- Blade length: approx. 6.5 inches (165mm), hand-measured as shown in photos — slight variation of 1–2mm is normal
- Grind: traditional single bevel (kataba), right-handed — bevel on the right side, flat back on the left
- Back side features urasuki (concave hollow) with uraoshi (flattened rim) — traditional single-bevel construction for clean food release and easy stone sharpening
- Please note: as a right-handed single bevel knife, it is not suitable for left-handed use
- Thick spine tapering to a keen edge — sturdy enough for fish heads and joints
HANDLE
- Genuine wenge wood, chestnut-shaped (kuri-gata) Japanese wa handle
- Polished stainless bolster and end cap
- Lightweight handle shifts the balance forward for controlled, powerful cuts

CARE
- Hand wash and dry immediately after use; not dishwasher safe
- Sharpen with whetstones for best results
- Wipe the wood handle dry; occasional mineral oil keeps it looking its best
