NAGIBA Sujihiki 270mm — N690 Stainless Steel, Octagonal Wa Handle


A sujihiki is the Japanese-style slicer: long, narrow and thin, built to finish a cut in one clean pull instead of sawing back and forth. At 270mm there is enough blade to take a side of salmon, a tuna loin, a brisket or a full roast in a single motion, leaving a smooth, glossy face on every slice.


WHY N690


N690 is a cobalt-enriched high-carbon stainless steel, and it is a real step up from the VG10 used in most knives at this level:


• More chromium (about 17% vs 15% in VG10) — better rust resistance, which matters when you are working with raw fish, citrus and salt all day

• Cobalt and molybdenum added — supports a hard edge at 60+ HRC without the brittleness VG10 is known for

• Tougher edge — VG10 has a reputation for micro-chipping against bone, a hard board or a partly frozen product; N690 is more forgiving

• Comparable edge retention, easier to bring back — it takes a fine edge on a whetstone without the long sessions powder steels demand


Same class of sharpness as VG10, with better corrosion resistance and a tougher, more durable edge.


BLADE


• 270mm / 10.63" N690 stainless steel, 60+ HRC

• Satin finish, thin blade grind for low drag and clean release

• Edge ground to under 15 degrees per side

• Blade height 35mm / 1.38", spine thickness 2mm / 0.08"


HANDLE

CARE


Hand wash and dry immediately after use. Not dishwasher safe. Use a wood or composite cutting board — glass, stone and ceramic will damage the edge. Not intended for bone, frozen food or hard-shell items.
