This 210mm (8") gyuto is made from 9Cr18MoV high-carbon stainless steel — a high-chromium, molybdenum-vanadium alloy prized for its balance of edge retention, corrosion resistance, and easy maintenance. THE BLADE
The gyuto is the all-purpose Japanese-style chef's knife — the one that handles the majority of kitchen tasks. With a gently curved profile, it slices, dices, and rock-chops with equal confidence, moving smoothly from vegetables to boneless proteins to herbs. The blade face carries a nashiji ("pear-skin") finish, a softly textured matte surface that helps food release cleanly off the side and gives each piece its own subtly unique look.
THE HANDLE
Fitted with a traditional Japanese-style octagonal handle in olive wood, capped with a contrasting dark ferrule.
